Salt & Pepper Broccoli

So delicious with egg fried rice!

Any roasted broccoli fans out there? If you’ve tried it before, Then you’re probably shouting hell yeah! Can we do better.. also a hell yeah. We’re giving you - Salt & Pepper Broccoli. It sounds so simple but it’s absolutely banging 💥

The Tofu version is our go to when we get Chinese food, but we’ve been craving those extra greens lately and this 100% hits the spot. 🥦 It’s tender in the middle, with delicious golden edges and irresistibly crispy tips scooping up all that salt and peppery goodness. In short, it’s more tasty than you thought broccoli could be! Oh and it takes all of 20 mins. 🌶🧂

Here’s the deets:

🥦 INGREDIENTS:
• 200g broccoli
• 60g asparagus
• 1/4 tsp sichuan peppercorns
• 1/2 tsp black pepper
• 1/2 tsp garlic granules
• 1/2 a red onion
• 2 cloves garlic
• 1/4 tsp Chinese spice
• 1/2 tsp oregano
• 3 tablespoons cornflour
• 1 tsp salt
• Loads of spring onions
• 1 red chilli

🥦 METHOD:
1. Cut broccoli into florets and add to a bowl with your asparagus or any other veg you want to use!
2. Add one tsp of salt, 2 tsp of olive oil and coat in cornflour. Keep adding cornflour until you get the desired consistency. I don’t like mine too doughy so I didn’t use a lot!
3. Fry in a pan on medium high until the broccoli is cooked through and also crispy on the edges.
4. Remove from pan and set aside. In the same pan, add more oil and fry your sliced onions and garlic. When they start turning translucent, add in your garlic granules, Chinese 5 spice, ground peppercorns (I ground sichuan and black peppercorns in my pestle and mortar beforehand), oregano and a teaspoon more salt.
5. Once combined, add in your chopped spring onions, red chilli and broccoli + asparagus mix and enjoy!
