Chipotle Jackfruit Charcoal Tacos

Can we have TACOS with a side of TACOS please?! We’ve gone all out & put together 3 ways of eating tacos veggie style. As a bonus we’re sharing a quick recipe for charcoal tacos but also for our special Chipotle Jackfruit because why have standard tacos when you can jazz them up a touch! These are a proper party pleasure and super easy to assemble. 

P.s. the first person to think that Jackfruit could genuinely be a pulled pork alternative for us veggie was extremely ambitious but also 100% correct. When cooked correctly, Jackfruit can be bursting with flavours, succulent and juicy and crispy on the edges - stiff competition for any barbecued pork on the market! When not cooked correctly, it can be bitter and bland. Follow this recipe for a fool proof way to amazing flavour!

SERVING AMOUNT – 6-8 Tacos

TOP TIP – Make sure your sauce is thin enough so that all the flavours can infuse into the Jackfruit. If the sauce is not thick enough, all you’re going to do is coat this on the outside. 

INGREDIENTS 

For the Jackfruit

  • 1 Tin of Jackfruit

  • 1 tsp - Cumin Powder

  • 1 tsp - Garlic Powder

  • 1 tsp - Chilli Powder

  • 1 tsp - Paprika

  • ¼ tsp - Turmeric

  • 2 tsp - Lime Juice

  • 1 tsp - Agave

  • 1 tbsp - Soy Sauce

  • 4-5 drops - Liquid Smoke (optional)

  • 1 cup - Chipotle Sauce

METHOD

  1. Drain the Jackfruit and add it to a bowl. Use your hands to break the Jackfruit so that it resembles pulled pork shreds. 

  2. Add the Jackfruit and Chipotle Sauce to a large saucepan (non-stick) at medium heat and combine. Then add in the spices and mix well for 5-6 minutes until well combined. Finally, add in the lime juice, agave and soy sauce and mix for a further 2 mins. Simmer, stirring occasionally until the pan is dry and all the sauce has been absorbed by the Jackfruit. 

  3. Preheat the oven to 220C. Grab a baking sheet and drizzle with some oil (we use a spray oil which makes this easier and less greasy!).  Transfer the cooked Jackfruit onto the baking sheet and spread out into one even layer. Bake for 20 mins until the edges are crispy. 

  4. Serve with your favourite Taco toppings!! 

For the Charcoal Tacos

Ingredients

  •  250g of Self Raising Flour

  • 10g of Charcoal Powder

  • 1 tbsp of Sesame oil (olive oil is also fine)

  • 1 tsp of Salt

  • 150ml of water

  • optional - sesame seeds or nigella seeds

Method

1. Mix together the flour, salt and charcoal in a bowl. Mix the oil & water into the dry ingredients to form a dough and gently knead for 2 mins until you start to form a ball.

2. Split the dough into 25-30g pieces and roll each into a paper thin circle shape. It’s important you get these paper thin otherwise they’ll be too thick!

3. Heat a pan on high heat and once it’s very hot, pop on your tacos to cook for 30 seconds on each side. You don’t really want to go more than 30 seconds otherwise they’ll end up being too rigid to fold.

4. Add your favourite toppings and tuck in!! 😄
