Harissa & Mince Cabbage Rolls

Makes about 14 rolls:
🥬 Ingredients for sauce:
1 can tomatoes
1/2 can water
1 tsp tomato purée
2 tsp @verylazyfooduk garlic
2 tsp @belazu_co smoked chilli Harissa
3 sprigs of thyme
🥬 Ingredients for filling:
1 red onion
4 cloves garlic
1 chilli
2 carrots, shredded
3 cups @quorn_uk mince
1 tsp cumin
1/2 tsp paprika
1 tsp ras el hanout
Salt + pepper
Bunch of coriander + parsley
🥬 Method:
1. First make the filling by sautéing some onion and garlic in a pan until they’re golden. Then add the chilli, carrots, mince and rest of the spices. Cover and cook on low until the carrots are well cooked.
2. While that’s cooking, get your sauce going. Sauté some garlic in a pan and add your tomato purée and harissa paste. Mix well then add tinned tomatoes and water. Add thyme and leave to simmer until it forms a consistency you like.
3. Separate cabbage leaves and boil them for a few minutes in water. Take it out and fill with the mince mix and roll like shown in the video. Stack it up in an oven proof dish, spoon over the sauce and sprinkle over some @applewood_cheese cheese. Grill in the oven until the cheese is melted. Enjoy!
