Kale & Tortellini Soup

This is something I made last week when the weather was still miserable 😖 and temperatures were below zero! It’s a super comforting and warming dish and is going to be a regular feature in our kitchen now! I added some wilted kale into my soup for extra vitamins.

🍅 Ingredients:
3 tomatoes
1 handful cherry tomatoes
3 sticks of celery
1/2 leek (green part)
1 whole garlic bulb
2 red chillies

1/2 tsp paprika
1 tsp oregano
1 tbsp nutritional yeast
3 sprigs thyme
1 tbsp coconut milk (the thick part)
1/2 a litre stock

Method:
• Roast all the top section of ingredients together in a bowl until the skin starts peeling off the tomato. Keep an eye on it and make sure the leeks don’t burn - I took mine out of the oven before the tomatoes were done.
• Blitz them up and add to a pan with the stock and rest of the ingredients. So simple! Season to taste and enjoy!
