Corn Chowder With A Chilli Corn Garnish
Corn Chowder with a Chilli Corn Garnish - something to warm you up when the weather is so cold 🥶. This chowder is so creamy, full of goodness and you MUST have it with a hunk of crusty bread 🥖. I like my chowder to be quite thick and hearty but not completely smooth, so feel free to blend yours to whatever consistency you prefer! And if you make this, you absolutely have to have the chilli corn garnish on top because that chilli oil adds another dimension and brings all the flavours together 😋
🌽 Ingredients:
Chowder:
• 1 cup frozen corn
• 1 large leek (sliced)
• 4 sticks of celery (chopped)
• 3 potatoes (I used 6 baby potatoes)
• 1 bay leaf
• 1 white onion (finely chopped)
• 2 cups water, 4 tsp @yondu.uk or 2 cups of veggie stock
• 1/2 tsp paprika
• 1/2 tsp cayenne pepper
• 2 tbsp nutritional yeast
• 1 tsp thyme
• 1/3 cup milk @oatly
• A drizzle of cream @alpro
Chilli corn garnish:
• 1 corn on cob (corn sliced off it)
• 4 tbsp chilli oil
• Chilli flakes
• 1 spring onion (sliced)
• Handful of chives (finely chopped)
• Pepper
🌽 Method:
1. Heat some oil in a pan and add your sliced leeks, chopped onions, bay leaf and celery.
2. Once they are soft, add your peeled and chopped potatoes and cook down for a few minutes.
3. Add your stock and frozen corn at this point and cook until the potatoes are tender.
4. Blitz up the veggies and then add it back into the pan.
5. Get the hob on again (on low) and add your paprika, cayenne pepper, nutritional yeast, turmeric, thyme, salt & pepper.
6. Add your milk and once everything is mixed well, put a lid on while you prep the garnish.
7. In a pan, heat up some chilli oil (or olive oil with chilli flakes, a clove, star anise and peppercorns). Once the oil is hot, add your spring onions and sweetcorn. Keep stirring until the sweetcorn is well cooked and then add the chives.
7. Add your chowder to a bowl with a drizzle of cream and the garnish. Enjoy!
