Rhubarb and Cardamom Loaf
I really wanted to come up with an easy to make loaf cake that was also seasonal. Sooo here’s my lovely Rhubarb & Cardamom Loaf! I specifically kept the actual loaf moderately sweet as I wanted a drizzle that would bring a real earthy sweetness instead. To be honest, this kind of tastes like apple crumble 😍

Ingredients:
Loaf:
300g plain flour @rightfoods
4 tsp baking powder @droetkerbakes
150g caster sugar @tateandlylesugars
300ml milk @oatly
125ml olive oil
1 tsp vanilla extract @nielsenmasseyuk
160g rhubarb
1 tsp sugar @silverspoonpr
4 pods of cardamom
50ml water
Drizzle:
250g rhubarb
8 cardamom pods
50ml water
150g golden icing sugar @billingtonsuk
Method:
1. Preheat your oven to 180 degrees.
2. Mix together the flour and baking powder (you can even sieve it together). Then add the caster sugar as well. Add all the liquids to the same bowl; milk, olive oil and vanilla extract and fold together. Don’t over mix this!
3. In a pan, add the chopped rhubarb, water, 1 tsp of sugar and ground cardamom. Pop a lid on and keep heat on medium until the rhubarb has broken down. Let this mix cool and then fold it into the cake batter.
4. Pop into the oven for 55 minutes exactly. The cake may seem moist in the middle but it’ll be perfectly cooked.
5. While the cake bakes, make the rhubarb drizzle by doing the same process with the rest of the rhubarb (250g) and 8 cardamom pods. Once it has cooled, add to the icing sugar and mix well. Let this cool and then drizzle on top of the loaf.
6. Enjoy warmed up as it tastes best this way!
