Spiced Aubergine with Lemony Butter Beans
The perfect combination for a spring lunch
What’s better than throwing together a few ingredients for a quick lunch? 😋 This might look complicated, but it’s just another really simple meal you can cook in under 30 minutes - and the longest part of the cooking is just waiting for the aubergine to cook in the oven! The spicy aubergine pairs so well with the soft and lemony butter beans, and of course you’ve got to add a bit of tang with some quickly pickled onions! I’ve also added a poached egg on top for added protein!

Ingredients:
🫘 :
1 can butterbeans
Zest of one lemon
Juice of one lemon
10 mint leaves
1 tsp oregano
Salt and pepper
Chilli flakes
🍆 :
1/2 an aubergine
Olive oil
Salt and pepper
3/4 tsp paprika
1 tsp garlic granules
1 tsp cumin
Handful kale
🧅 :
1 red onion
1 red chilli
1 tsp sugar
Vinegar to cover
Method:
1. Slice aubergine into rounds. Mix the spices together and rub into the rounds, along with the olive oil. Pop into the air fryer or bake until it is fork tender.
2. Add butterbeans to a mixing bowl with all the other ingredients and mix well.
3. For the onion and chilli, slice very thinly and add enough vinegar to cover. Add sugar and microwave for a minute until the onion is soft.
4. Plate up and enjoy!
