Baby Corn Manchurian

Baby corn Manchurian is a popular Indo-Chinese dish made by deep-frying battered baby corn (I air fried mine) and then tossing it in a spicy and tangy sauce made with garlic, ginger, soy sauce, chilli sauce, and vinegar. It is a delicious appetiser or side dish that can be enjoyed with fried rice or noodles.

Ingredients:

10 baby corns

1/2 red pepper

1/2 green pepper

1/4 cup corn flour

1/8 cup gram flour

Water to get a thick consistency

1 chilli

1 tsp black pepper

2 tbsp hot and sweet sauce or regular tomato sauce

1/2 cup passata

1/2 red onion

1 thumb size piece ginger

3 cloves garlic

1 tsp chilli powder

1/4 tsp turmeric

Spring onions + coriander to garnish

Method:

1. Make a slurry with the corn flour, gram flour and water that is not too thick as you want to toss the chopped baby corn into there and coat it well. Pop the baby corn into the air fryer and fry until nice and crisp.

2. To a pan, heat up some olive oil then fry some chilli, onion, ginger and garlic (all chopped/grated very fine). Next add the passata, hot & sweet sauce/tomato sauce, chilli powder and turmeric.

3.  Add the peppers and then the baby corn and mix well to combine.

4. Top with coriander and spring onions and enjoy!
