Chilli Cheese Fries

These Vegan Chilli Cheese Fries with @ilchestercheese melting cheese stole the show, and let me tell you, the cheese pull had me floored 😱. Who knew plant based cheese could be this melty, gooey and packed full of flavour?

Serves 4 as a side.

Ingredients:
4 cloves garlic
1/4 of a thumb size piece of ginger
2 tsp chilli powder
1/4 tsp turmeric powder
2 chillies
1 pinch baking soda (to neutralise the acidity of the tomatoes if you need it)
1 1/2 tsp pepper
2 tbsp ketchup
3/4 cup passata
1/4 cup water
2 large baking potatoes
4 slices of @ilchestercheese Vegan Melting Mature Cheese

Method:
1. Firstly, peel and chop your potatoes to resemble chips and leave them to soak in a bowl of cold, salted water. I left mine for about 3-4 hours but you can leave yours up to overnight. Soaking the potatoes gets rid of any starch and makes the chips extra crispy.
2. Make the sauce by heating a tablespoon of oil in a pan and then frying your finely minced garlic, chillies and ginger. Next, add the passata, ketchup and water. Mix well and then add all the spices and salt.
3. While this is reducing, you can cook your chips in the air fryer. Mine took around 30-40 minutes to get nice and crispy.
4. Once you’ve reduced the sauce down to your desired consistency, add the chips and stir well.
5. Add your slices of @ilchestercheese Vegan Melting Mature Slices on top and pop into the oven until the cheese has melted.
6. Top with spring onion, chillies and enjoy whilst hot!
