Wild Garlic Arancini

I’ve just been throwing wild garlic into everything and this is one I’ll be making again and again! Wild Garlic Arancini - crispy golden balls of rice and melted mozzarella, infused with the fragrant and earthy flavor of freshly picked wild garlic 🌿

Make sure to save this one for when you’ve managed to get your hands on some wild garlic!

Make the pesto (I used the same for both my Arancini and the Linguine I made the other day - check my Wild Garlic Linguine post!)

Then simply add it to your risotto and roll into balls with a chunk of mozzarella in the middle. Then roll it in some panko breadcrumbs @yutakaeats and pop into the air fryer until golden!

Enjoy with a nice tangy tomato dipping sauce!
